  • 8 oz thick rice noodles
  • 1/2 cup lime juice
  • 1/3 cup water
  • 3 tbsp fish sauce
  • 1 tbsp rice vinegar
  • 3 tbsp brown sugar
  • 4 tbsp vegetable oil
  • 3/4 lb. medium 40/50 shrimp, peeled deveined
  • 3 garlic cloves, minced
  • 2 large eggs, lightly beaten
  • Salt
  • 6 tbsp chopped, unsalted roasted peanuts
  • 3 cups bean sprouts, well rinsed
  • 5 scallions, sliced thin
  • Lime
