  • 1 lb wild caught Atlantic salmon
  • 1 tbsp Good EVOO
  • 1 tbsp coarse sea salt
  • 2 tsp fresh cracked black pepper
  • 1 lemon

Directions

    Brush salmon with olive oil

    Even apply salt and pepper

    Zest lemon onto the salmon

    Freshly squeeze juice from half the lemon onto the fish

    Refrigerate for am hour or two before cooking

    Preheat oven to 400.

    When ready, bake salmon skin down for 15-25 minutes (depending on doneness preference)
