- 2 large chopped tomatoes
- 3 c. fresh or frozen corn kernels
- 1 Tbsp. basil
- 1 tsp. nutmeg
- 2 Tbsp. butter
- 2 Tbsp. oil
- 1 tsp. pepper
- salt to taste
Directions

1In a skillet, put tomatoes.

4Add pepper and salt, butter and oil.

6If desired, you can add leftover chopped chicken and then add 1 tablespoon basil and 1 teaspoon nutmeg.

8Add 1/2 cup grated Parmesan cheese. Let cheese melt.
