- 1 whole Onion
- 1 whole Bell Pepper, Chunked
- 2 Tablespoons Butter
- 1 pound Sausage, Sliced
- 4 whole Zucchini Or Squash, Sliced
- 48 ounces, fluid V8 Juice
- Garlic, To Taste
- Oregano, to taste
- Salt, To Taste (optional)
- 1 cup White Or Brown Rice, Uncooked
Directions

1Cut onion and bell pepper into small chunks and saute in butter for 3-5 minutes.

2Add in sliced sausage and zucchini, saute another 3-5 minutes.

3Pour in V8 Juice and season with garlic and oregano (I also like to add a bit of salt).

4Pour in uncooked rice, stir all together, then cover and simmer for 20-30 minutes.
