  • 1 whole Onion
  • 1 whole Bell Pepper, Chunked
  • 2 Tablespoons Butter
  • 1 pound Sausage, Sliced
  • 4 whole Zucchini Or Squash, Sliced
  • 48 ounces, fluid V8 Juice
  • Garlic, To Taste
  • Oregano, to taste
  • Salt, To Taste (optional)
  • 1 cup White Or Brown Rice, Uncooked

Directions

    Cut onion and bell pepper into small chunks and saute in butter for 3-5 minutes.

    Add in sliced sausage and zucchini, saute another 3-5 minutes.

    Pour in V8 Juice and season with garlic and oregano (I also like to add a bit of salt).

    Pour in uncooked rice, stir all together, then cover and simmer for 20-30 minutes.
