Smashed Bacon Ranch Potatoes

  • 1 12 lbs potatoes, cut into 1 . 5-inch pieces
  • 5 slices smoked bacon
  • 14 cup ranch dressing
  • 2 tablespoons buttermilk or 2 tablespoons whole milk
  • 1 tablespoon white wine vinegar

Directions

    Cook potatoes in boiling salted water until very tender, 15-20 minutes.

    Drain; return to saucepan and mash coarsely.

    Cook bacon until browned; drain & crumble.

    Pour off drippings from skillet leaving clinging particles in skillet.

    add potatoes, salad dressing, milk and vinegar to skillet, stir until well blended.

    Cook, stirring constantly until hot.

    Add salt & pepper to taste.
