- 2 lbs medium yukon gold potatoes or 2 lbs red potatoes
- 2 teaspoons kosher salt
- 14 teaspoon fresh ground black pepper
- 13 cup extra-virgin olive oil
Directions

1Preheat oven to 350 degrees F. Wrap each potato individually in foil.

2Place on a rimmed baking sheet.

3Bake until tender, 4560 minutes.

4Let cool slightly.

5Unwrap potatoes and arrange on same baking sheet.

6Set another rimmed baking sheet over potatoes, rimmed side up, and press gently to smash potatoes without breaking them apart.

7Season with salt and pepper; drizzle with half of the oil.

8Carefully turn potatoes to coat.

9Preheat oven to 500 degrees F. Roast potatoes for 15 minutes.

10Drizzle with remaining oil, turn to coat, and continue roasting until crispy and golden brown, 2530 minutes.
