Smoked Salmon Mousse

Ingredients
- 1/2 cup tomato juice
- 1 (1/4 ounce) envelope unflavored gelatin
- 1 (7 1/2 ounce) can red salmon, drained,skin and round bones removed
- 2 green onions, cut into 1 inch pieces
- 3/4 cup nonfat cottage cheese
- 1/2 cup nonfat plain yogurt
- 1/8 teaspoon liquid smoke
- 2 teaspoons lemon juice
- fresh ground pepper, sprinkle
Directions

1Combine tomato juice and gelatin in small saucepan, let stand for 5 minutes.

2Heat and stir on low until gelatin is dissolved.

3Set aside.

4Process remaining 7 ingredients in food processor, scraping down sides as necessary, until smooth.

5Add gelatin mixture through chute.

6Mix Well.

7Pour into lightly greased plastic lined 2 1/2 cup mold or deep bowl.

8Cover with plastic wrap.

9Chill for several hours until firm.

10To serve, turn out and remove wrap.
