Ingredients

  • 1 c. hot water
  • 1 c. sugar
  • 1 (2 lb.) can crushed pineapple
  • 1 large and 1 small container Cool Whip
  • 2 pkg. plain gelatin
  • 2 Tbsp. lemon juice
  • 2 Tbsp. cold water
  • 1 angel cake
  • coconut

Directions

    Dissolve gelatin in cold water.

    Add hot water.

    Mix in sugar, pineapple and lemon juice.

    Refrigerate until slightly thick, then fold in the large container of Cool Whip.

    Break cake into chunks. Alternate layers of cake and Cool Whip.

    Mix in large, foil lined bowl.

    Set overnight.

    Unmold and frost with small container of Cool Whip.

    Sprinkle with coconut.
