- 1 eggplant
- 2 eggs
- 1/4 c. breadcrumbs
- 1 tsp. Italian seasoning
- 1/4 c. grated Parmesan cheese
- 1 tsp. oil
Directions

1Slice eggplant into 1/2-inch slices.

2Dip into lightly beaten eggs.

3Drain and dip into coating made with the breadcrumbs, Italian seasoning and Parmesan cheese, mixed.

4Oil the bottom of a shallow baking pan.

5Place eggplant in it.

6Spray the top with cooking spray.

7Bake at 425° for 20 to 30 minutes.

8Turn once.
