"Spanakopita" - Spinach Pie

  • 1 lb. filo (pastry sheets)
  • 2 (10 oz.) pkg. fresh spinach
  • 2 c. Greek Feta cheese
  • 1 c. cottage cheese
  • 3 small green onions
  • 3 Tbsp. chopped parsley
  • 3/4 to 1 lb. butter
  • 5 eggs

    Wash spinach well; remove stems.

    Sprinkle salt all over spinach (2 to 3 tablespoons salt).

    Let set for 15 minutes, then rinse spinach.

    Drain and squeeze off all liquid.

    In a large bowl beat the eggs; add the cottage cheese and Feta cheese, parsley and onion and fold in the spinach.
