"Spanakopita" - Spinach Pie

- 1 lb. filo (pastry sheets)
- 2 (10 oz.) pkg. fresh spinach
- 2 c. Greek Feta cheese
- 1 c. cottage cheese
- 3 small green onions
- 3 Tbsp. chopped parsley
- 3/4 to 1 lb. butter
- 5 eggs
Directions

1Wash spinach well; remove stems.

2Sprinkle salt all over spinach (2 to 3 tablespoons salt).

3Let set for 15 minutes, then rinse spinach.

4Drain and squeeze off all liquid.

5In a large bowl beat the eggs; add the cottage cheese and Feta cheese, parsley and onion and fold in the spinach.
