Spanish Okra

  • 2 c. onions, chopped
  • 2 c. canned tomatoes, crushed
  • 2 c. okra
  • 1/3 c. sugar
  • 1 tsp. salt

Directions

    Cook onions in as little water as possible.

    Add tomatoes and continue heating until they boil, then add okra and again continue cooking until okra is done, about 10 minutes.

    Stir with a spoon, vertically, so that onions stay on bottom.

    When the okra is done, add sugar and salt and mix thoroughly.
  5. 5
    Warmed over Spanish okra is just as good, if not better than the first time.
