Ingredients
- 3 Tbsp. olive oil
- 5 cloves garlic (whole), smashed
- large bunch fresh spinach
- 1 (16 oz.) can cannellini beans
- 1 large tomato, cubed
- 1 (16 oz.) can garbanzo beans
- 1/4 tsp. oregano (leaf)
- 1/2 tsp. basil (leaf)
- 1 c. elbow macaroni
- 1/2 c. white wine
- chopped fresh parsley
- crusty bread
- grated Parmesan cheese
Directions

1In 6 to 8 quart pot brown garlic in olive oil.

2Steam spinach with cover on; add rest of ingredients.

3Cook elbow macaroni and add to mixture.

4Break to high simmer; add wine to boil off alcohol (1 to 2 minutes).

5Serve in bowl; sprinkle with parsley and Parmesan cheese.

6Enjoy with crusty bread.
