- 2 (10 oz.) pkg. frozen chopped spinach
- 2 c. herb seasoned stuffing mix
- 1 c. grated Parmesan cheese
- 6 eggs, slightly beaten
- 3/4 c. margarine, softened
- 1/2 tsp. seasoned salt
- 1/2 tsp. thyme leaves
- 1/4 tsp. pepper
Directions

1Cook spinach according to package directions; drain well. Grease cookie sheets.

2Heat oven to 350°.

3Crush stuffing mix into fine crumbs.

4In large bowl, combine all ingredients; mix well. Shape in 1-inch balls.

5Place on prepared cookie sheets.

6Bake at 350° for 10 to 12 minutes, or until set.

7Serve on toothpicks. Makes 50 appetizers.
