Spinach-Cheese Pie

Ingredients
- 2 lb. chopped spinach
- 1 lb. Feta cheese, crumbled
- 8 oz. Cheddar cheese, chopped
- grated
- 1 lg. onion, chopped
- Filo dough
- 3 tbsp. olive oil
- Butter
- Herbs and spices, to taste (dry mustard, oregano, sage, salt and pepper)
Directions

1Cook spinach until done, strain thoroughly.

2Saute onion in olive oil.

3Lightly coat a large casserole dish with butter.

4Layer strips of filo dough in dish (6 sheets with melted butter brushed between layers).

5Combine spinach, cheeses, onion and herbs and spices; spread mixture in casserole dish.

6Put filo dough on top, tuck in edges and drizzle butter on top.

7Slit top of dough to let steam escape.

8Bake at 400F for 20 to 30 minutes until dough browns.
