  • 1 pound spinach rinsed, trimmed and, lightly steamed
  • 2-3 tablespoons balsamic vinegar
  • 2 Cloves garlic
  • 1 x tomatoes fresh
  • 1 x basil fresh
  • 2 x parsley leaves
  • 1 x onions

    Whiz all the ingredients together in a blender or food processer until you have a thick but pourable puree.

    Serve over hot cooked brown basmati rice.
