Spinach Puree

Ingredients

  • 3 big potatoes
  • 500 grams frozen spinach, unthawed
  • 1 glug good quality olive oil
  • 1 salt
  • 1 ground black pepper
  • 1 italian seasoning
  • 1 pinch chili powder

Directions

    Peel and dice your potatoes.

    Put them in a big pot, completely submerged in cold salted water.

    Bring to a boil.

    Cook for about 15 minutes

    Then add your frozen spinach to the pot and bring back up to the boil.

    Cook for about 7 minutes

    Take off heat and drain.

    Season with salt, pepper, chili powder, a glug of olive oil and italian seasoning.

    Blend the spinach and potatoes into a creamy puree.

    Serve warm
