Spinach Quiche

- 1/2 lb. Cheddar cheese
- 3 eggs
- 1 1/2 c. milk
- 1 small can spinach
- 3 Tbsp. flour
- 8 1/2 or 9 1/2-inch pie crust
Directions

1Poke holes in bottom and sides of pie crust.

2Pre-brown crust for a few minutes.

3Remove crust from oven.

4Drain (and squeeze) spinach to remove liquid.

5Layer spinach on bottom of pie crust. Top with shredded Cheddar cheese.

6Mix flour with 1/4 cup milk. Beat together eggs and remaining milk.

7Beat flour/milk mixture into egg/milk mixture.

8Pour mixture into pie crust.

9Bake on cookie sheet in 350° oven for 45 minutes or in 375° oven for 1/2 hour.

10Cool 5 to 10 minutes before cutting.
