Spinach Quiche

  • 2 pkg. frozen chopped spinach
  • 1 c. half and half
  • 16 oz. cottage cheese
  • 3 eggs, beaten
  • 1 c. chopped ham
  • chopped mushrooms, onions and bell peppers
  • 2 pie shells

Directions

    Prepare spinach as directed on package.

    (You can use fresh spinach, if desired, steam until tender first.)

    Mix all ingredients in a large bowl and salt lightly.

    Pour into pie shells and bake at 350° for 45 to 60 minutes.

    Serves well with green salad, fresh fruit, hard bread and white wine.

    Serves 8 to 10 people.
