Ingredients

  • 4 slices bacon
  • 1/4 c. bacon fat
  • 1/2 c. vinegar
  • 1/4 c. water
  • 1 c. sugar
  • 1 tsp. salt
  • 1 egg, beaten
  • 1 bag cleaned spinach
  • 1 red onion, sliced

Directions

    Dice, fry and drain bacon.

    Mix bacon fat, vinegar, water, sugar, salt and egg.

    Bring to boil and cook about 1 minute or until slightly thickened.

    Cool.

    Pour over the spinach and onions and toss along with bacon.
