Spinach Soup (Potage)

- 1 bunch Spinach
- 1/2 Onion
- 1 slice Bacon (optional)
- 2 tbsp Olive oil
- 200 ml Water
- 1 Consomme soup stock cube
- 400 ml Milk
- 1/2 tsp Salt
- 1 Pepper
Directions

1Separate the stems and leaves of the spinach.

2Chop into 5 cm pieces.

3Cut the onion into 3 mm slices.

4Cut the bacon into 5 mm strips.

5Heat olive oil in a pot, add the stems of the spinach and onion, and then stir-fry.

6When they become soft and wilted, add the remaining spinach and bacon, and continue stir-frying.

7Add water and consomme soup stock cube, and simmer for about 10 minutes over low heat.

8When they are cooked, blend in a blender, and pour the mixture back into the pot.

9Pour in milk, and adjust the flavor with salt and pepper.
