Spinach Stuffed Shells

  • 1/2 boxes Jumbo Shells, Cooked And Drained (about 20)
  • 10 ounces, weight Frozen Chopped Spinach, Thawed And Drained
  • 15 ounces, weight Part Skim Ricotta
  • 8 ounces, weight Shredded Part Skim Mozzarella, Divided
  • 24 ounces, fluid Roasted Garlic Pasta Sauce (or Sauce Of Your Choice)

    Boil shells for 15 minutes.

    Drain.

    Rinse with cold water.

    Drain.

    While shells are boiling, I thaw the spinach in the microwave for 7 minutes, following the instructions on the package.

    Drain.

    Mix ricotta, about 1 3/4 cups of shredded mozzarella, and thawed, drained spinach.

    In a greased 9x9 baking dish, spread about 3/4 of the jar of sauce.

    Stuff shells and place seam side up in the sauce.

    Drop the remaining sauce by spoonfuls over shells.

    Then sprinkle with remaining mozzarella.

    Bake covered at 400 degrees for 25 minutes.

    Uncover and cook 2-3 minutes more.
