Split Pea Fritters

Ingredients
- 3 ounces raw yellow split peas, rinsed
- 2 cups water
- 1/4 cup onion, diced
- 1/4 cup carrot, shredded
- 1 (6 g) package instant chicken broth
- 1/4 cup flour, plus
- 2 tablespoons flour
- 1 teaspoon baking powder
- 1 dash salt and pepper
- 1/4 cup skim milk
- 1 egg, beaten
- 1 tablespoon oil
- 1 teaspoon oil
Directions

1In saucepan combine peas, water, onion, carrot and broth mix.

2Bring to a boil.

3Reduce heat, cover and simmer, stirring occasionally about 30 minutes until peas are soft.

4Let cool.

5In a bowl, combine flour, baking powder, salt and pepper. Add milk and egg to cooled split pea mixture and stir.

6Stir into dry ingredients.

7In a 10 inch nonstick skillet, heat 1 tsp oil.

8Spoon 4 heaping tablespoons of batter into skillet, forming 4 small fritters.

9Cook until edges bubble and fritters are browned on the bottom.

10Turn over and cook until browned on the other side.

11Remove to a warmed plate. Set aside and keep warm.

12Repeat procedure with remaining oil and batter.
