Split Pea Soup

- 1 lb. dried split peas, rinsed and drained
- 1 ham hock
- 1 whole onion
- 6 to 8 c. water
- 1 carrot, cut in half
- 3 to 4 chicken bouillon cubes
- pepper to taste
- Louisiana hot sauce (optional)
Directions

1In a Dutch oven,

3peas, water, ham hock, onion and carrot.

4Bring to a boil

5and simmer for about 1 hour.

6Remove onion and carrot (leave

7carrot if you wish).

8Remove ham hock and let cool.

12and chopped meat from ham hock. Simmer until peas are real tender and mushy.

13Time will vary. Serve with corn bread and a little hot sauce.
