Split Pea Soup

Ingredients
- 1 lb. split peas
- 3 qt. water
- 1 medium onion, chopped
- 1/2 c. diced raw carrots
- 1/2 c. diced raw potatoes
- 1 ham bone or 1/8 lb. salt pork
Directions

1Rinse and sort peas.

2Place in large kettle with remaining ingredients.

3Bring to a boil and let simmer for at least 3 hours. Season to taste.

4Add more water from time to time, if necessary. Put soup through sieve, food mill or blender.

5Reheat and serve.
