Split-Pea Soup

Ingredients
- 1 lb. (2 1/4 c.) green split peas
- 1 meaty ham bone (1 1/2 lb.)
- 1 1/2 c. sliced onion
- 1/2 tsp. pepper
- 1 tsp. salt
- 1/4 tsp. marjoram
- 1 c. diced celery
- 1 c. diced carrots
Directions

1Cover peas with 2 quarts cold water and soak overnight or simmer gently for 2 minutes.

2Then soak 1 hour.

3Add ham bone, onion and seasonings.

4Bring to boil.

5Cover, reduce heat and simmer (don't boil) 1 1/2 hours.

6Stir occasionally.

7Remove bone. Cut off meat and dice.

8Return meat to soup, add vegetables. Cook slowly, uncovered, 30 to 40 minutes.

9Salt to taste.

10Serves 6 to 8.
