Split Pea Soup

- 1 lb. dry split peas
- 2 1/2 qt. water
- 6 ham hocks
- 1 carrot, cut up
- 2 to 4 green onions, cut up
- 1 large onion, chopped
- 2 to 3 stalks celery, cut
- pepper to taste
- 3 bay leaves
- pinch of rosemary, crushed
- 3/4 lb. smoked sausage
Directions

1Rinse peas and boil with water and ham hocks.

2Reduce heat to a slow boil; cover and cook 45 minutes.

3Add to pot, cut up vegetables and seasonings.

4Simmer for 2 hours.

5After 2 hours, remove ham hocks and set them aside.

6Place smoked sausage in soup and cook for 1/2 hour longer over low heat.
