Split Pea Soup

Ingredients

  • 1 lb. dry split peas
  • 2 1/2 qt. water
  • 6 ham hocks
  • 1 carrot, cut up
  • 2 to 4 green onions, cut up
  • 1 large onion, chopped
  • 2 to 3 stalks celery, cut
  • pepper to taste
  • 3 bay leaves
  • pinch of rosemary, crushed
  • 3/4 lb. smoked sausage

Directions

    Rinse peas and boil with water and ham hocks.

    Reduce heat to a slow boil; cover and cook 45 minutes.

    Add to pot, cut up vegetables and seasonings.

    Simmer for 2 hours.

    After 2 hours, remove ham hocks and set them aside.

    Place smoked sausage in soup and cook for 1/2 hour longer over low heat.
