Split Pea Soup

  • 1 lb. pkg. dry split peas
  • 1 ham bone (with meat left on)
  • 2 carrots, thinly sliced
  • 1 medium onion, chopped
  • 1 sprig parsley
  • 1/4 tsp. peppercorns
  • 1 bay leaf
  • 1/2 tsp. salt
  • thyme leaves
  • 5 1/2 c. water

Directions

    In Dutch oven or large pot over medium-high heat, heat ham bone, split peas, carrots, onion and 5 1/2 cups water to boiling. Tie parsley, peppercorns, thyme and bay leaf in a cheesecloth bag. Add to ham bone mixture.

    Reduce heat to low; simmer covered 1 hour.

    Discard spice bag.

    Add salt to taste.

    Remove bone from soup; cut off meat and return only meat to soup.

    Makes 7 cups.
