Split Pea Soup

- 1 lb. pkg. dry split peas
- 1 ham bone (with meat left on)
- 2 carrots, thinly sliced
- 1 medium onion, chopped
- 1 sprig parsley
- 1/4 tsp. peppercorns
- 1 bay leaf
- 1/2 tsp. salt
- thyme leaves
- 5 1/2 c. water
Directions

1In Dutch oven or large pot over medium-high heat, heat ham bone, split peas, carrots, onion and 5 1/2 cups water to boiling. Tie parsley, peppercorns, thyme and bay leaf in a cheesecloth bag. Add to ham bone mixture.

2Reduce heat to low; simmer covered 1 hour.

3Discard spice bag.

4Add salt to taste.

5Remove bone from soup; cut off meat and return only meat to soup.

6Makes 7 cups.
