Ingredients

  • 1 c. white corn meal
  • 1 c. boiling water
  • 3 eggs
  • 1 tsp. salt
  • 1 tsp. sugar
  • 3 tsp. melted margarine
  • 2 c. milk
  • 1 1/2 tsp. baking powder

Directions

    In a large mixing bowl, scald cornmeal with boiling water. Add eggs, salt, sugar and margarine.

    Mix well.

    Add milk.

    If mixture is not as thin as water, add more milk.

    Finally add baking powder and blend.

    Pour into a lightly greased 1 1/2-quart baking dish.

    Bake in a 375° oven for 35 to 45 minutes or until golden brown.

    Serve with pats of margarine.
