- 1 1/2 cups milk
- 1 teaspoon each salt and sugar
- 2 tablespoons unsalted butter
- 1 cup yellow cornmeal
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 cup buttermilk
- 3 eggs, separated
- 2 green onions, thinly sliced
Directions

1Preheat oven to 375 degrees.

2Butter 2 quart baking dish.

3In a 3 quart saucepan heat milk, salt, sugar & butter to boiling point.

4Slowly add cornmeal and stir with a wooden spoon for a few minutes or until mixture is thick.

5Remove from heat and transfer to a mixing bowl.

6Beat in baking powder and baking soda, Beat in buttermilk, scallions and egg yolks, one at a time.

7Cool to room temperature.

8Whip egg whites until stiff and fold in.

9Bake 40 minutes or until top is puffy.

10Spoon out onto plates alongside salad.

11Serve with soup of choice.
