Spring Vegetable Parcel

- 250 g cauliflower, cut into small florets
- 150 g carrots, peeled and sliced
- 60 g spring onions, sliced
- 1/2 clove garlic, peeled and thinly sliced
- 3 tbsp oil
- 1/2 None orange, grated zest
- 1/2 None lime, grated zest
- 1 sprig fresh flat-leaf parsley, finely chopped
Directions

1Preheat the oven to 350°F. Toss the cauliflower, carrots, spring onions, garlic, oil and orange and lemon zest together. Place on the center of a sheet of baking paper. Fold both sides of the paper over the vegetables and tie at each end with kitchen string to form a parcel. Lay on a baking tray and bake for 20-25 minutes. Open the parcel and sprinkle with the parsley.
