- 2 or 3 medium potatoes, peeled and cut in 1/2-inch pieces
- 1 pt. sour cream
- 1 cube butter or oleo
- 6 eggs
- 1/4 c. water
- 3/4 c. flour
- dash of salt
Directions

1Use a big kettle.

2Cover diced potatoes with 3 times as much water.

3Bring to a rolling boil, then leave on medium heat.

4While potatoes are cooking, mix eggs, water, salt and enough flour so dumpling mixture doesn't easily fall from spoon.

5Drop dumpling mixture by teaspoon into potatoes and water.

6Cook 5 to 10 minutes (will be dry in middle when done).

7Don't let boil too fast or dumplings will fall apart.

8When done, drain.

9Add sour cream and butter.

10Stir.
