Squash Casserole

Ingredients

  • 1 lb. squash
  • 1 tsp. sugar
  • 1/2 c. mayonnaise
  • 1/2 stick margarine
  • 1 egg, slightly beaten
  • 1/2 c. onions, chopped
  • 1/4 c. bell pepper, chopped
  • 1/2 c. pecans, chopped or water chestnuts
  • 1/2 c. grated cheese
  • salt and pepper to taste

Directions

    Cook squash. Drain and mash. Add all ingredients (except margarine and cracker crumbs).

    Place in 2-quart casserole, greased.

    Top with crumbs and dot with margarine.

    Bake at 350° for 35 to 40 minutes. (Suitable for freezing.)

    Serves 6 to 8.
