Squash Casserole

Ingredients

  • 1 lb. summer squash
  • 1/2 c. grated onion
  • 1/2 c. chopped green pepper
  • 2 Tbsp. chopped parsley
  • 1/8 tsp. nutmeg
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 1/4 c. bread crumbs
  • 1/4 c. bacon drippings
  • 1/2 c. milk
  • 2 eggs
  • 4 strips bacon

Directions

    Grate squash and combine with onion, green pepper and parsley. Season with nutmeg, salt and pepper. Combine bacon drippings, 1 cup bread crumbs, milk and slightly beaten egg. Fold into squash mixture. Pour into greased casserole dish. Fry bacon until crisp. Crumble and combine with remaining bread crumbs.

    Sprinkle over top of casserole.

    Bake in a 350° oven for 30 to 40 minutes.
