- 2 lb. fresh squash
- 2 eggs
- 1 onion, chopped
- 2 cans cream of mushroom soup
- grated Cheddar cheese
- Ritz crackers
Directions

1Cut squash and boil to your tenderness.

2In a big bowl, mix well squash, 2 eggs, chopped onions, cream of mushroom soup and Cheddar cheese.

3After mixing well, pour in a long casserole dish. Top with more cheese (as much as you like) and crumbled Ritz crackers.

4Bake in the oven for approximately 45 minutes or until golden brown.
