Squash Casserole

Ingredients

  • 8 to 10 medium size squash
  • 1 medium onion, chopped
  • 1 can cream of onion soup
  • 1 can cream of mushroom soup
  • 8 oz. sour cream
  • 1 pkg. cornbread stuffing, divided in half
  • 2 c. grated Cheddar cheese, divided in half

Directions

    Wash and dice squash.

    Simmer with chopped onion until tender. Drain.

    Mix soups with sour cream until well blended.

    Add squash and onion to soup mixture and lightly mix.

    Place 1/2 the cornbread stuffing in the bottom of a 13 x 9-inch baking dish. Spoon 1/2 the squash mixture over stuffing.

    Sprinkle 1/2 the cheese over soup.

    Spoon remaining soup over cheese, then sprinkle remaining stuffing and cheese on top.

    Bake at 375° for 20 to 30 minutes.
