Squash Casserole

  • 2 lb. yellow squash, sliced
  • 1 large onion, chopped
  • 1 (8 oz.) bag cornbread stuffing mix
  • 1 stick butter or margarine
  • 8 oz. sour cream
  • 1 can cream of chicken soup
  • 1 c. Cheddar cheese or shredded carrots

Directions

    Cook squash and onions until tender; drain off most of water. Coat bread crumbs with butter.

    Combine all ingredients together. Place in casserole dish; bake at 350°.

    Save some crumbs for top.
