- 2 lb. fresh squash or 2 pkg. frozen yellow squash
- 1 large carrot
- 1 small onion
- 1 c. sour cream
- 1 c. cream of chicken soup
- 2 sticks butter
- 1 pkg. Pepperidge Farm stuffing mix
Directions

1Cook and drain squash; add carrot, onion, sour cream and chicken soup.

2In another pan melt butter and add stuffing mix. In a casserole dish, place 1/2 stuffing mix on bottom and pour over with squash mix.

3Sprinkle rest of stuffing on top.

4Bake for 25 to 30 minutes in a 350° oven.
