Squash Casserole

Ingredients

  • 6 medium yellow squash, sliced
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1 egg, well beaten
  • 1/2 c. milk
  • 1 can cream of mushroom soup
  • 1/4 c. finely chopped onion
  • 1/4 c. finely chopped green pepper
  • 8 saltines, crushed
  • 1 c. grated cheese

Directions

    Boil squash in small amount of water several minutes, then drain.

    Combine all ingredients except a small amount of cheese and crackers.

    Pour into casserole.

    Sprinkle with remaining cracker and cheese.

    Bake, uncovered, at 350° for 30 minutes or until lightly browned on top.
