Squash Casserole

Ingredients

  • 1 qt. fresh squash
  • 1 egg, slightly beaten
  • 1/2 c. cracker crumbs
  • 1/2 c. Pepperidge Farm herb-seasoned stuffing mix
  • 2 Tbsp. butter
  • 1 small onion, chopped
  • 1 c. grated cheese
  • salt and pepper to taste

Directions

    Cook squash and onion until tender.

    Mash and add butter, egg, 1/2 cup cheese, 1/2 of the cracker crumbs and stuffing mix.

    Pour into greased baking dish.

    Sprinkle with remaining cracker crumbs, stuffing mix and cheese.

    Bake at 350° until cheese browns lightly, 20 to 30 minutes.
