- 2 1/2 lb. yellow squash
- 1 large carrot, grated
- 2 tsp. pimento
- 1 c. cream of chicken soup
- 1/2 pt. sour cream
- 1/2 c. margarine
- 8 oz. crumb type herb stuffing mix
Directions

1Preheat oven to 375°.

2Boil, drain and cool squash.

3Mix in carrot, pimento and sour cream.

4Add salt and pepper to taste. Melt margarine and mix with stuffing mix.

5Place 1/2 of mixture on bottom of 2-quart casserole.

6Add squash mixture, top with rest of stuffing.

7Bake 30 minutes.

8Serves 8.
