Squash Casserole

Ingredients

  • 6 to 8 small yellow squash, cooked and drained
  • 1 medium onion, chopped
  • 3/4 c. milk
  • 1/4 tsp. salt
  • 5 to 6 strips bacon, fried crisp, drained and crumbled
  • 3 Tbsp. green bell pepper, chopped
  • 1 c. Cheddar cheese, grated
  • 1 egg, beaten
  • 5 to 6 Ritz crackers, crumbled
  • black pepper to taste

Directions

    Cook squash, onion and pepper until tender and drain.

    (Cook each separately.)

    Layer squash, onion and bell pepper in a greased casserole dish; sprinkle with bacon and grated cheese. Beat egg and milk together and pour over casserole.

    Top with crushed crackers.

    Bake for 20 to 25 minutes at 425° until bubbly and brown.
