- 6 to 8 small yellow squash, cooked and drained
- 1 medium onion, chopped
- 3/4 c. milk
- 1/4 tsp. salt
- 5 to 6 strips bacon, fried crisp, drained and crumbled
- 3 Tbsp. green bell pepper, chopped
- 1 c. Cheddar cheese, grated
- 1 egg, beaten
- 5 to 6 Ritz crackers, crumbled
- black pepper to taste
Directions

1Cook squash, onion and pepper until tender and drain.

2(Cook each separately.)

3Layer squash, onion and bell pepper in a greased casserole dish; sprinkle with bacon and grated cheese. Beat egg and milk together and pour over casserole.

4Top with crushed crackers.

5Bake for 20 to 25 minutes at 425° until bubbly and brown.
