Squash Casserole

Ingredients

  • 2 lb. squash, sliced
  • 2 onions, chopped
  • 2 eggs
  • 1 c. sharp Cheddar cheese, grated
  • saltine crackers (about 10), crushed
  • salt and pepper to taste
  • 1/2 c. shortening

Directions

    In frying pan, combine shortening, squash, onions, salt and pepper.

    Cook until done.

    Drain well.

    Pour in casserole dish. Cool about 15 minutes.

    Beat eggs, then stir into squash and onions.

    Put cheese on top of squash.

    Sprinkle crushed saltines over cheese.

    Preheat oven at 350° and bake for 20 minutes.
