Ingredients
- 2 lb. squash, sliced
- 2 onions, chopped
- 2 eggs
- 1 c. sharp Cheddar cheese, grated
- saltine crackers (about 10), crushed
- salt and pepper to taste
- 1/2 c. shortening
Directions

1In frying pan, combine shortening, squash, onions, salt and pepper.

2Cook until done.

3Drain well.

4Pour in casserole dish. Cool about 15 minutes.

5Beat eggs, then stir into squash and onions.

6Put cheese on top of squash.

7Sprinkle crushed saltines over cheese.

8Preheat oven at 350° and bake for 20 minutes.
