  • 2 c. sliced squash
  • 1 small onion, chopped
  • 1 c. sharp Cheddar cheese, grated
  • 1/4 stick margarine
  • 1 egg, slightly beaten
  • 1/4 c. milk
  • 8 Ritz crackers, crushed

Directions

    Boil squash and onion in salted water until tender.

    Drain and mash with a fork.

    Add cheese and margarine while squash is hot. Add egg and milk.

    Mix thoroughly.

    Stir in cracker crumbs; season with pepper.

    Put in shallow pan, greased lightly with margarine, and bake at 350° until brown, about 20 minutes.
