- 2 lb. yellow squash
- 1 small onion, chopped
- 1/2 stick margarine
- 2 c. grated sharp cheese
- 2 eggs, beaten
- 1/2 c. milk
- 16 Ritz crackers, crushed
- salt and pepper
Directions

1Wash and slice squash.

2Cook with onion in water until tender. Drain and mash.

3Add margarine and cheese.

4Stir well.

5Add eggs, milk and crackers.

6Blend and season to taste.

7Place in 2-quart casserole dish.

8Bake uncovered at 350° for 30 minutes.
