Squash Casserole

Ingredients

  • 5 medium squash, sliced
  • 1 carrot, grated
  • 1 small onion, chopped
  • 1 Tbsp. pimento bits
  • 1/2 c. sour cream
  • 1 can cream of chicken soup
  • 1 stick butter
  • 1 small pkg. herb Pepperidge Farm bread crumbs

Directions

    Cook squash until barely fork-tender (5 minutes on High in microwave).

    Mix carrot, onion, squash, pimento, sour cream and soup in bowl.

    Melt butter.

    Mix with bread crumbs.

    Layer in casserole, beginning with crumbs and ending with crumbs. Microwave on High for 5 minutes.

    (May bake in 350° oven for 30 minutes.)

    If you microwave, you may want to brown crumbs briefly under broiler.
