Squash Casserole

Ingredients

  • 1 lb. ground beef
  • 6 small squash, chopped
  • 2 Tbsp. oil
  • 1/2 c. cracker crumbs
  • 1 1/2 tsp. salt
  • dash of pepper
  • 1/4 c. butter
  • 1 c. Cheddar cheese
  • 1/2 c. flour
  • 2 c. milk

Directions

    Boil squash in water and salt for 8 minutes; drain.

    Cook beef and onion in oil and drain.

    Add crumbs, salt and pepper. Stir in butter and flour.

    Add milk; cook until bubbly.

    Add cheese.

    Stir until mixed.

    Put squash in bottom of buttered casserole.

    Top with meat mixture.

    Bake for 30 minutes at 350°.
