- 2 lb. yellow squash
- 1 stick oleo, melted
- 1 can cream of chicken soup
- 1 pkg. Mexican cornbread mix
- 1 medium onion, chopped
Directions

1Cook squash and onion just until tender.

2Pour into large bowl.

3Add undiluted soup, oleo and cornbread mix.

4Add 1/2 soup can of water.

5Stir all together.

6Pour into greased casserole and bake at 350° for 30 minutes.

7Eggplant may be used in place of squash.

8Very good.
