  • 2 cups (slightly Packed) Grated Acorn Squash
  • 1 cup Low Fat Cottage Cheese, Small Curd
  • 2 whole Eggs
  • 1 whole Small Onion, Chopped Finely
  • 1/2 cups Whole Wheat Flour
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Garlic Salt
  • Non-stick Cooking Spray

    Combine all ingredients in a large bowl and mix well (everything except the cooking spray, of course).

    Heat a skillet to medium-high and spray with oil spray.

    Form into patties using about 2 tablespoons of mixture per patty.

    Add patties into the skillet making sure you dont crowd the pan.

    Cook for 5 minutes and turn over to cook for 3-4 minutes more.

    Remove from skillet and finish cooking the rest of the patties.

    Makes about 18, serving size is 3.
