Ingredients
- 2 lb. yellow squash, sliced
- 2/3 c. chopped onion
- 2 green onions (including tops)
- 1/3 c. chopped green pepper
- 2 egg whites, beaten to soft consistency
- 1 or 2 tsp. sugar or 1/4 to 1/2 artificial sweetener
- salt and pepper to taste (if desired)
- 1 c. seasoned or buttered bread crumbs plus 1 tsp. sugar or 1/2 packet artificial sweetener
Directions

1Cook squash in small amount of water until tender.

2Drain if too much liquid.

3Cool.

4Saute chopped vegetables in small amount of oleo or Pam but not brown.

5Beat egg whites until soft peak forms.

6Add all ingredients to squash except crumbs.

7Place in baking dish and bake at 350° for about 20 minutes.

8Spread buttered bread crumbs on top and bake until lightly browned.
