Squash Supreme

Ingredients

  • 2 lb. yellow squash, sliced
  • 2/3 c. chopped onion
  • 2 green onions (including tops)
  • 1/3 c. chopped green pepper
  • 2 egg whites, beaten to soft consistency
  • 1 or 2 tsp. sugar or 1/4 to 1/2 artificial sweetener
  • salt and pepper to taste (if desired)
  • 1 c. seasoned or buttered bread crumbs plus 1 tsp. sugar or 1/2 packet artificial sweetener

Directions

    Cook squash in small amount of water until tender.

    Drain if too much liquid.

    Cool.

    Saute chopped vegetables in small amount of oleo or Pam but not brown.

    Beat egg whites until soft peak forms.

    Add all ingredients to squash except crumbs.

    Place in baking dish and bake at 350° for about 20 minutes.

    Spread buttered bread crumbs on top and bake until lightly browned.
