State Senate Bean Soup

Ingredients

  • 1 pkg. Great Northern beans
  • 3 large onions, finely chopped
  • 1 small bay leaf
  • pinch of thyme
  • 1 clove garlic, chopped
  • 1 ham bone with meat
  • 1 Tbsp. each: salt and sugar
  • 2 Tbsp. parsley

Directions

    Wash and soak beans overnight.

    Add onions, garlic, parsley, thyme, bay leaf and ham bone.

    Cover.

    Cook slowly until tender. Remove ham bone, meat and bay leaf.

    Remove 2 cups beans with a little liquid.

    Puree and return to pot with 1 cup water.

    Cut ham into small pieces and return to soup pot.

    Serve hot with corn bread.
